Recipe for Tomato Enzyme

Tomatoes contain a high level of lycopene. Lycopene is supposed to be very effective in fighting and preventing cancer, particularly prostate disorders. It has also been reported to reduce risk of heart disease.

Ingredients: Tomatoes or cherry tomatoes
lemons
honey

Method:
1. Rinse, dry, slice tomatoes.
2. Peel, slice lemons thinly.
3. Divide ingredients into 3 portions. Stack ingredients in sequence: tomatoes, lemons, honey into a glass jar. Repeat the process with the remaining 2 portions.
4. Seal tight with food wrap after the 3 portions are completely stacked in. Cover with lid. Keep in cool dry place for 1 week before serving.

This information is taken from one of the enzyme books in an earlier post and notes from an enzyme seminar that Pn Ng attended.

How to prevent mould

Select only fresh fruits or vegetables. Remove ragged surfaces. The glass containers must be sealed tight with food wrap and covered with a lid after all ingredients are stacked-in. This will prevent pathogen or spores from contaminating the contents. Semi-dried surface will easily get mouldy. Shake the container slightly every one or two days to moisten the ingredients. Use a dry spoon to mix or scoop the contents if you need to do so. During fermentation, avoid storing containers in damp, stuffy places.

Mouldy?

Sometimes we find some white stuff on the surface of the enzymes during fermentation.
It's a layer of bio-film, an occurrence of bacteria activity that forms during fermentation. This is quite harmless. According to Dr Joean, it's the kind of stuff found in SK-II!

Preparation for making fruit drink enzyme

Good hygiene is absolutely required in preparation of fruit drink enzyme. Use clean disposable gloves to handle all food ingredients. Glass containers, cutting board and knife must be thoroughly cleaned, sterilized and dried. Sun dried preferably. Books have cautioned against using a hairdryer to blow dry as it may contaminate the containers and utensils.

We are introducing a few enzyme recipe books which can be found in the shops. Many of them are in Mandarin but we have found a few books which are bilingual for us "bananas" (yellow on the outside and white on the inside) from MGS :)


Technique of storing enzyme

Place enzyme in cold storage to keep it fresh. A bottle of enzyme should be consumed within 1 month.

Fermentation period

2 weeks.

Technique of consuming enzyme:

o   Hold about 30ml of enzyme under the tongue and swallow it slowly. This will stimulate the nerves and promote blood circulation.

     o   Consume enzyme 1 hour before or after meals.

Those who have stomach problems are advised to consume it after meals or mix enzyme with water will reduce its effectiveness.

Enzyme Making Technique

o       Clean the fruits thoroughly.

Fruits that are not cleaned up will cause the enzyme to turn mouldy. Therefore, fruits should be rinsed and wind dried. Soak fruits in vinegar for 10 minutes may remove pesticides.  Fruits should also be cut as thin as possible to allow fermentation.

 

o       Ensure that the glass bottle is clean.

Rinse the bottle and sterilize it with hot water, then wipe and allow it to dry under the hot sun. The enzyme will turn mouldy if not fully cleaned or or if oily.

 

o   Fruits must be sweet and fresh enough.

The fruits enzyme should taste sweet. The enzyme will taste bitter or sour if the fruits are not sweet enough.

 

o   Shake the glass bottle frequently.

Shake the glass bottle during the 3rd or 4th day during fermentation, for an even fermentation. Some rock sugar may be added if the enzyme tastes too sour, or divide the enzyme into 2 portions if it tastes too sweet.

How should we replenish enzymes?

o       Regular consumption of organic vegetables and fruits.

o       Home-made fruit enzyme.

To obtain external enzymes, you need to consume a lot of green vegetables and fruits. Enzymes are sensitive of heat. It will be destroyed in heat above 50 celcius.

Why do we experience enzymes deficiency?

 Stress and ageing will reduce and influence level of body enzymes, while improper lifestyle and eating habits will also deplete body enzymes, such as:

o       Improper eating habits that lead to imbalanced nutrition.

o       Incorrect cooking methods, cooking over high heat will

         damage food enzymes.

o       Over-consumption of alcohol.

o       Lack of exercise.

o       Stress.

o       Consume too much artificial and chemically-produced food.

Symptoms of Enzyme Deficiency

    o       Fatigue, susceptible to flu, and poor eyesight.

o       Skin problems such as pimples, black spots and hair loss.

o       Digestion problems, break wind frequently, constipation,   

         and smelly faeces.

o       Emotional problems such as depression, loss of

         concentration, nervousness and impatience.

The Functions of Enzymes

o   Cleanses the body: Expels toxins in the body, enhances the cells, accelerates digestion and strengthens the immune systems.

o   Cell revitalization: Accelerates metabolism, provides energy and revitalize the cells .

o   Anti-inflammation: Enzymes can help to maintain the condition of white blood cells, reduces inflammation in order to speed up the recovery of wounds.

o   Prevents bacteria: Helps accelerate the termination of bacteria by white blood cells, and also to accelerate cell revitalization.

Great for washing up baking utensils, pots and pans. Squeaky clean.

1 part enzymes, 1 part detergent and 10 parts water.

Discovered how to make dragonfruit enzyme bomb! :)


The bottle of dragonfruit & orange peel enzymes just blew up one day (day 11). Gushed like a geyser and shot right up to the ceiling. Good thing it's the balcony. Major cleaning up. Semi fermented fruit peel & pulp rained all over me. Hmm, maybe can recommend to danai spa to add that to their list of soaks & scrubs. Ah, new discovery. Maybe MGS can patent this.
